Cheese on Toast
Bombay potato

Ingredients

  • 1 thumb-sized piece of grated ginger
  • 2 large garlic cloves
  • 6 large vine tomatoes
  • 800g new potatoes
  • 3 tbsp sunflower oil
  • 1 large onion
  • 2 green chillies
  • 1 tsp black mustard seeds
  • 2 tsp ground coriander
  • ½ tsp turmeric
  • 1 tsp ground cumin
  • 2 tsp garam masala
  • small bunch coriander

Method

  • Peel the potatoes, chop and boil for 10mins until soft. Set aside to dry.
  • Chop onion into thin strips, cook with oil in a frying pan until soft.
  • Add the chillies, mustard seeds, ground coriander, turmeric, cumin and garam masala to the pan and fry for another 2 minutes.
  • Add the ginger, garlic and chopped tomatoes and the cooked potatoes.
  • Mix to coat the potatoes, add a splash of water and enjoy on the side of a chicken curry.
