Cheese on Toast
Chicken curry and bombay potato

Ingredients

  • 3 tbsp olive oil
  • 1 white onion
  • 2 garlic cloves
  • 3 tbsp curry powder
  • 1 tsp of garam masala
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1 bay leaf
  • ½ tsp grated ginger
  • ½ tsp sugar
  • ½ tsp salt 
  • 2 skinless boneless chicken thighs
  • 1 tbsp tomato paste
  • 1 cup plain yogurt
  • ¾ cup coconut milk
  • ½ lemon 

Method

  • Cook the onion on medium with some oil until browned.
  • Add garlic, curry powder, cinnamon, paprika, a bay leaf, ginger, garam masala, sugar, and salt. Stir for 2 minutes.
  • Add chicken, tomato paste, yogurt, and coconut milk. Bring it to a boil, then lower the heat and let it simmer for 20-25 minutes.
  • Remove bay leaf, add a splash of lemon juice and cook for 5 minutes.
  • Service with rice and a side of bombay potatoes.
