Ingredients

  • 250g Jumbo King Prawns
  • 1 glug Olive Oil
  • 1/2 tbs Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Smoken paprika
  • 1/2 tsp Chipotle Chilli Flakes
  • 3 Garlic cloves
  • 1 Mango
  • 1 Red Chilli
  • 1 Medium Red Onion
  • 1 Bunch Coriander
  • 2 Limes
  • 1 Avocado
  • 1/4 cup Sour cream ( optional )

Method

  • In a bowl combine the prawns with olive oil, cumin, paprika, smoked paprika, chipotle chilli flakes, 2 crushed garlic cloves and a pinch of salt. Set aside and leave to marinade.
  • To make the mango salsa combine the chopped mango, fresh chilli, finely diced red onion, half the chopped corriander, juice of 1 lime and a large pinch of salt.
  • To make the smashed avocado simply combine the smashed avocado, 2 crushed garlic cloves, the remaining chopped corriander, juice of the other lime, large pinch of salt and the sour cream.
  • Add the prawns to a frying pan, cook for 2mins each side.
  • Serve with tortillas, rice, or both! and enjoy.
