Ingredients

  • 2 Cod Filets
  • 300g Cherry Tomatoes
  • 1 Cup Black Olives
  • 1 Medium Red Onion
  • 3 Garlic Cloves
  • 2 Handfuls Spinach
  • 100g Feta Cheese
  • 1/2 Lemon
  • 1/2 Cup White Wine
  • 1tsp Oregano
  • 1tbsp Dill

Method

  • Preheat the oven to 200°
  • Add chopped tomatoes, olives, crushed garlic, lemon slices, white wine, oregano, black pepper and salt in a large oven tin. Add a little olive oil and mix well. Roast in the oven for 20mins
  • Rub the fish with lemon zest, salt, pepper and olive oil.
  • Take the large tin out of the oven after 20mins, add a layer of spinach and crumbled feta and dill, mix and place the fish fillets ontop, cooke for 15mins at 180°
  • Serve with some rice on the side and enjoy!
