Cheese on Toast
Tomato soup

Ingredients

  • 600g Cherry Tomatoes
  • 1 Red Pepper
  • 1 Red Chilli 
  • 4 Garlic Cloves
  • 1 White Onion
  • 1 Bunch Basil
  • 1/2 Pint Veg Stock

Method

  • Preheat the oven to 200°, place halved tomatoes, whole garlic cloves and quartered peppers on the baking sheet and drizzle with olive oil. Season well with salt and pepper. Roast in the oven for 45mins
  • 10mins before the tomatoes are done add chopped onion to a frying pan with some oil and cook on medium
  • Once tomatoes, pepper and garlic are done roasting combine with the onions in a saucepan with the veg stock and use a hand blender
  • Heat up and add the chopped fresh basil. Serve when warm
  • On the side toast some bread with extra virgin olive oil and sea salt
