Preheat the oven to 200°, place halved tomatoes, whole garlic cloves and quartered peppers on the baking sheet and drizzle with olive oil. Season well with salt and pepper. Roast in the oven for 45mins
10mins before the tomatoes are done add chopped onion to a frying pan with some oil and cook on medium
Once tomatoes, pepper and garlic are done roasting combine with the onions in a saucepan with the veg stock and use a hand blender
Heat up and add the chopped fresh basil. Serve when warm
On the side toast some bread with extra virgin olive oil and sea salt
