Ingredients

  • 150g Butter
  • 150g Caster Sugar
  • 4 eggs
  • 200g Self-raising Flour
  • 2 Oranges
  • 1 Lemon
  • 100g Icing Sugar

Method

  • Grate the zest of two oranges and one lemon.
  • Whisk the butter and sugar for five minutes.
  • Add in the eggs, one at a time, and continue to whisk.
  • Add in the flour (sifted), and the zest of oranges and lemon. Whisk until combined.
  • Pour the mixture into a loaf tin and bake for 55 minutes on 160 fan oven.
  • Once baked, cool in the loaf tin until cool then transfer onto a wire cooling rack.
  • For the icing, mix the icing sugar with the juice of the two oranges and spread on the top of the loaf. Enjoy!
